At Casale Fusco, our love for nature is expressed through a cultivation that respects the land and the seasons. Our organic farm, spread over 7 hectares of the Spoleto hills, is the beating heart of the estate: here, every blade of grass, every leaf, and every fruit tells a story made of passion, care, and Umbrian tradition.

From our vineyards come our Sangiovese dei Colli Martani IGT red wine and the Trebbiano Spoletino DOC white wine .

Over 3 hectares are dedicated to our olive groves, cultivated according to the DOP standards of the Spoleto-Assisi olive-growing area. The varieties grown are Moraiolo, Leccino and Frantoio, chosen to produce an extra virgin olive oil rich in aroma, with a fruity and balanced flavor — perfect for enhancing the dishes of Umbrian cuisine.

Among the centuries-old trees and gentle curves of the landscape, we have also planted a truffle orchard dedicated to the Summer Black Truffle (Tuber aestivum), a true culinary treasure that enriches the biodiversity of our land.

We also cultivate seasonal fruits: apricot, cherry, plum, and hawthorn trees, which allow us to make homemade jams, natural preserves, and flavored grappas and liqueurs using fresh fruit from the farm.

The remaining land is used for pasture and fodder, including a pond, woodland, and ancient oak trees where you can spot wild animals — the “Friends of Casale ” — such as hares, mallards and ducks, woodcocks, pheasants, hoopoes, turtle doves, magpies, owls, and tawny owls.
